CAJUN CURE FOR HANGOVERS

Yields: 2-4 Servings
Comment:
This concoction of high-vitamin vegetables will replenish your body after a long night of drinking
and celebrating. For those who can handle a little alcohol, below is an alcoholic version of this tasty
cocktail.
Ingredients:
2 (16-ounce) cans diced or crushed tomatoes
1 (8-ounce) V8® juice
1 green bell pepper, chopped
1 red bell pepper, chopped
1 small red onion, chopped
1 cucumber, peeled, seeded and chopped
1 tsp minced garlic
¾ tsp salt
3 tbsps red wine vinegar
1 tbsp extra virgin olive oil
1 can beef broth
salt and black pepper to taste
Louisiana hot sauce to taste
4 celery sticks for garnish
4 lime wedges for garnish
Method:
In a blender, purée tomatoes, V8®, bell peppers, onions, cucumbers, garlic, salt, vinegar and oil.
Thin soup to drinking consistency by adding beef broth and additional V8® if necessary. Season
with salt, pepper and hot sauce. Chill and serve in highball glasses. Garnish with celery stick and
lime wedge.
LAFITTE'S SUNRISE:
For those who don't have a hangover, here is a vodka-laced version of this tasty cocktail. Separate
prepared cocktail into servings and add 1 ounce high-quality vodka to each. Blend well in a martini
shaker and serve in a highball glass garnished with spicy grilled jumbo shrimp. |
